Monthly Recipe for July
Outdoor grilling doesn't have to be all burgers, hotdogs, and thick white-bread buns. Take a lighter approach to your barbecued meal with a healthy serving of Grilled Salmon With Avocado Salsa. Try it for Meatless Monday or Fish Friday. It's a quick, easy dinner — so easy, you can serve it on a weeknight, and have relatively little mess to clean up!

Ingredients
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
4 salmon fillets
Avocado Salsa
2 avocados, chopped into large cubes
1/4 red onion
1 lime, juiced
1 tablespoon olive oil
1 1/2 teaspoons salt
Garnish
Chopped cilantro
Preparation
- In a large bowl, mix oil, salt, pepper, and paprika. Coat the salmon fillets and refrigerate for 30 minutes.
- Grill the salmon on high heat for 2 minutes each side.
- In a separate bowl, lightly toss the avocados, red onion, lime juice, olive oil, and salt to taste.
- Spoon avocado salsa on top of the cooked salmon.
- Top with finely cut cilantro and enjoy!
